Out of your two type designs I believe that the one that was photographed is much stronger. You really get the feeling of the bent over paper. Plus, I also love how the rug adds texture to the type. You should try experimenting with this a bit more and photograph your cut out letters on different surfaces to see if you find an even more interesting texture.
I think the photographed version is more visually interesting and has more character. I think it would be interesting to see a word made up of these letters, especially if they were all photographed at different angles. For the illustrator version I think that adding outlines to the cutout shapes helps a lot with legibility. The fact that the baseline shifts with the shapes is interesting and I think you could play with that when making words as well.
